April showers bring May showers...and rainbows! Kids love rainbows! This naturally makes them a fun, kid-friendly way to teach youngsters about proper nutrition.
Spring is a perfect time to bring a little color into the kitchen and mealtime.
Colorful foods produce phytonutrients, organic compounds, which are believed to promote good health. Have your children create a rainbow to hang on the refrigerator as a colorful reminder to eat foods of every color each day.
Why not serve up a healthy rainbow for lunch or dinner today and watch as those rainbows magically disappear? Rainbow Wraps is one featured recipe from Cooking’s Cool in the Spring and the best part, it is fast, fun and yummy!
You Will Need:
colander small bowl pizza cutter
cutting board small spoon
Rainbow Wraps:
6 whole wheat or spinach tortillas
8 ounces cream cheese
1 tablespoon taco seasoning
1 avocado mashed
3 carrots peeled
and sliced into thin strips
3 cucumbers seeded
and sliced into thin strips
3 celery stalks sliced into thin strips
3 green peppers sliced into thin strips
1 head lettuce shredded
In a small bowl, combine cream cheese, taco seasoning and mashed avocado. Lay one tortilla flat and spread with the cream cheese mixture. Arrange veggies on the tortilla. Roll up the tortilla and slice in two.
Makes 6 servings
Tips:
• Always wash your hands and tie your hair up before beginning to cook.
• Always have adult supervision when cooking.
• Make sure you wash all of the vegetables before you use them.
• Slice the wraps into little pinwheels for a healthy after-school snack.
• Serve with a salad made of colorful veggies for a complete rainbow meal.
• For variety, add sliced turkey, shredded chicken or black beans.
