BBQ Pulled Chicken

Tired of the same sandwiches and salads while on the go? This chicken is simple to make and easy to pack up with some rolls and cole slaw for a picnic or potluck. The best part, you probably have the ingredients on hand already! If you don't feel like turning your oven on, you will get the same results by using a slow cooker. 

Ingredients:
2-3 pounds boneless, skinless chicken breast
1-1 1/2 cups BBQ Sauce
1/2 cup shredded cheese (optional)
Cole slaw, (optional)

Directions:
  1. Preheat oven to 325.
  2. In a large oven-safe casserole dish, add chicken and top with 1 cup BBQ sauce.
  3. Cover with foil and place in oven for 2 hours or until chicken shreds easily.
  4. Remove pan from oven and remove foil.
  5. Using a knife and fork, shred chicken in casserole dish.
  6. Add additional BBQ sauce (optional)
  7. Remove from oven and either serve hot with shredded cheese or let cool and pack up for your picnic with some cole slaw!
