This shrimp salad is super easy to make and requires no cooking at all; you can make it ahead of time for a quick week night meal too. The shrimp can be served in a roll or wrap with lettuce or on top of a big garden salad - or feel free to eat it straight from the bowl like my boys did!
Ingredients:
2 pounds medium cooked shrimp (51-60), thawed
3/4 cup mayonnaise
Juice from 1/2 lemon
3-4 sprigs of dill, chopped
3 stalks of celery, sliced thin
Salt, pepper and Old Bay Seasoning, to taste

Directions:
- In a small bowl, combine mayonnaise, lemon juice and chopped dill. Mix well and set aside.
- Removed tails from thawed shrimp and pat dry with a paper towel.
- Slice shrimp in half lengthwise and place in a large bowl with sliced celery.
- Add mayonnaise mixture to shrimp and celery, stir until well coated.
- Season with salt, pepper and Old Bay to your liking.
- Either serve immediately or cover and refrigerate until ready to enjoy.
