Creamy Shrimp Salad with Dill

This shrimp salad is super easy to make and requires no cooking at all; you can make it ahead of time for a quick week night meal too. The shrimp can be served in a roll or wrap with lettuce or on top of a big garden salad - or feel free to eat it straight from the bowl like my boys did!

Ingredients:
2 pounds medium cooked shrimp (51-60), thawed
3/4 cup mayonnaise 
Juice from 1/2 lemon
3-4 sprigs of dill, chopped
3 stalks of celery, sliced thin
Salt, pepper and Old Bay Seasoning, to taste
Lettuce, optional
Rolls, optional 

Directions:
  1. In a small bowl, combine mayonnaise, lemon juice and chopped dill. Mix well and set aside.
  2. Removed tails from thawed shrimp and pat dry with a paper towel.
  3. Slice shrimp in half lengthwise and place in a large bowl with sliced celery.
  4. Add mayonnaise mixture to shrimp and celery, stir until well coated.
  5. Season with salt, pepper and Old Bay to your liking.
  6. Either serve immediately or cover and refrigerate until ready to enjoy.
