Dare I Say, A Perfect Food? Cookie Dough You Can Eat Raw

Just Cookie Dough Ice Cream Sandwiches

Hands up if you love cookie dough. Raw. And two hands up if your kids love it!

But, alas, most cookie dough is made with eggs, right? And we all know that eating raw eggs is not okay, what with salmonella and all that. Enter Just Cookie Dough from Hampton Creek. Cookie dough made without eggs or other ickiness and designed to be eaten raw. 

In my opinion, that is a perfect food. So when the team at Hampton Creek offered to send me a recipe for “Just Cookie Dough Ice Cream Sandwiches" and a jar of Just Cookie Dough Chocolate Chip to try, who was I to say no? And it just so happened that I had a half gallon of salted caramel ice cream in the freezer. One afternoon, this happened (recipe below).

Ingredients
  • 2 cups Just Cookie Dough
  • 1 quart ice cream, any flavor
  • 1½ cups dark chocolate or bag of chocolate chunks
  • 1 tablespoon coconut oil (or any neutral flavored oil)

Directions
  1. Divide the cookie dough into 2 equal portions.
  2. Lay a large piece of plastic wrap or wax paper on your counter-top.
  3. Shape one portion of the cookie dough into a 6 x 8 inch rectangle by hand and flatten.
  4. Lay another piece of plastic or wax paper over the dough and flatten with a rolling pin to about ¼ inch thickness.
  5. Transfer the to a baking sheet and place in the freezer for at least 30 minutes.
  6. Repeat this with the other portion of cookie dough and place that section in the freezer for 30 minutes as well.
  7. While the cookie dough is freezing, put ice cream in the fridge to soften.
  8. Once both sheets of cookie dough are frozen, remove them from the freezer, remove the wax paper (or plastic wrap) and place the first half on the cutting board.
  9. Working quickly before it melts spread the ice cream as evenly as possible and then place the second cookie dough sheet on top.
  10. Return to the freezer for at least two hours.
  11. Just before you remove the ice cream from the freezer, melt the chocolate in the microwave. Add the oil and mix well.
  12. Place the frozen ice cream/cookie dough on a cutting board and use a sharp knife to cut into any shapes you wish (squares and triangles are easiest).
  13. Quickly dip each ice cream sandwich into the melted chocolate and return to baking sheet. Placing them on a fork before you dip them makes it easier.
  14. Return the sandwiches to the freezer for at least 30 minutes (but they will keep for a couple of days).
  15. Enjoy!
