Birthday Cake Bacon Pancakes with Maple Whipped Cream

One of my favorite memories growing up was my birthday breakfast. On my birthday, I was able to choose exactly what I wanted to eat and it was the only day that it was no holds barred, anything goes. While I can't remember most of the actual meals that I chose (although I'm sure a few included strawberry ice cream), it's the actual tradition that I remember so fondly. 

Now that I have my own family, we have created our own birthday breakfast tradition that my kids look forward to each and every year... Birthday Cake Bacon Pancakes with Maple Whipped Cream. Yep, I combined all of my kids' favorite breakfast items and rolled them into one delicious birthday breakfast treat. Every other day of the year is about healthy oatmeal and egg whites... in our house birthday breakfast means bacon and sprinkles. I hope that my kids will remember our birthday tradition for years to come!

Birthday Cake Bacon Pancakes with Maple Whipped Cream
Makes about 15 medium pancakes

Ingredients for Pancakes:
2 cups of self-rising cake flour
2 eggs
2 tbsp sugar
1/4 cup applesauce or vegetable oil 
1 1/3 cup milk 
1 tsp vanilla 
3 slices of bacon, cooked until crispy
Sprinkles

Ingredients for whipped cream:
1 pint heavy cream
5 tbsp real maple syrup

Directions:
  1. Whisk together all pancake ingredients except bacon and sprinkles.
  2. After batter is combined, crumble up cooked bacon and add to mixture and stir.
  3. Butter a hot griddle and drop about 1/3 cup of batter per pancake onto griddle.
  4. Add some sprinkles on your cooking pancakes (the amount is up to you!).
  5. Flip your pancakes when you start to see bubbles on the top of them.
  6. Meanwhile, make your maple whipped cream! Pour heavy cream into bowl of mixer and add maple syrup. Whip on high until stiff peaks form. You can also use a handheld whisk if you don't have a mixer.
  7. Plate your pancakes and top with a heavy dollop of your whipped cream... It will immediately start to melt a bit and it is heavenly tasting!
  8. Top with sprinkles and celebrate!
