Waldorf Astoria Cookie

A member of the Macaroni Kid Travel Team was graciously hosted at the fabulous Waldorf Astoria Orlando recently and Chef Fabrice Benezit provided the below recipe for the Waldorf Astoria Cookie. Note that there isn’t any baking powder or baking soda. Chef says, “the magic between the eggs, butter, sugar and flour will make the best cookie ever.” 

This recipe was sent in grams which is more exact than volume measurements we are used to, I did my best to convert it - please keep in mind the conversions are not exact.

Yield:  7 cookies

Ingredients:
1 cup + 3 tbsp. unsalted butter (150 grams)
1/4 cup brown sugar (50 grams)
1/3 cup granulated sugar (75 grams)
1 egg
1 tsp. vanilla extract (5 grams)
1 1/2 cup all-purpose flour (200 grams)
1 cup walnuts (chopped finely) (100 grams)
1 cup chocolate chips (250 grams)

Directions:
  1. Cream butter with all sugars
  2. Add egg and mix well
  3. Add walnuts, flour and chocolate at the same time.
  4. Mix until flour is incorporated into the butter mixture.  Do not over mix.
  5. Scoop 4 oz of dough and place on a sheet pan with parchment paper
  6. Space a few inches apart
  7. Bake at 325 degrees Fahrenheit for 20 minutes
  8. Cool and serve
