Roasted Brussel Sprouts

Roasting Brussels sprouts brings out a natural sweetness in them and also gives the veggies a golden brown, crisp outer layer. Even if you are unsure of Brussels sprouts, give this recipe a try, it may become a new family favorite!

Ingredients:
1 lb Brussels sprouts (fresh or frozen)
2 tbsp olive oil
1 tbsp butter, melted
Salt & pepper to taste
 
Directions:
  1. Preheat oven to 450F.
  2. If using fresh - clean, trim and blanch Brussels sprouts in boiling salted water for 1 minute. If using frozen, microwave for 2 minutes to thaw.
  3. Cut each sprout in half lengthwise and toss with olive oil and butter.
  4. Pour onto a baking sheet or into a large cast iron skillet.
  5. Place in the oven and roast for about 20 minutes and then stir the sprouts. Roast for an additional 15-20 minutes, checking/stirring about every 5 minutes.
  6. Sprouts should be crisp and browned on the outside and tender inside.
  7. Remove from oven and season with salt and pepper.
  8. Serve hot.
