Mashed Potato Pizza

Years ago I ordered a mashed potato pizza at a restaurant and fell in love! Recently I tried to recreate it, but with a few shortcuts. I purchased ready-made pizza crust, instant mashed potatoes, cheese and bacon... then it was time to experiment. This recipe is easy to customize with your own favorites and you can add whatever toppings you'd like!

Ingredients:
Ready-made pizza crust, we used Boboli
1 1/2 - 2 cups mashed potatoes per pizza
1 - 1 1/2 cups shredded cheese
Bacon, cooked and cut into pieces
Sour cream, optional

Directions:
  1. Preheat oven according to directions on pizza crust.
  2. Place crust on a pizza pan or sheet pan.
  3. Spread mashed potatoes evenly over pizza crust. Potatoes should be warm or hot before placing on crust.
  4. Top mashed potatoes with shredded cheese and bacon.
  5. Bake according to directions on pizza crust package or until cheese is melted and starts to brown.
  6. Serve hot with sour cream on the side for dipping and enjoy!
