Grilled Balsamic Portabella Sandwich

The grill isn't just for meat anymore! Even meat lovers will enjoy this tasty sandwich. Or your 11 year old who decided he no longer wants to eat meat... this takes some creativity at times!


Makes 2 sandwiches


Ingredients:

Portabella mushrooms (2 large or 4 medium size)

1 cup fresh baby spinach

1 cup balsamic vinegar

2-4 slices extra sharp cheddar cheese

*Ciabatta bread (2 rolls or a loaf)

Olive oil


Directions:

  1. Rinse off mushrooms and if the stems are attached, trim them (I also scrape the gills/underside off with a spoon).
  2. Put mushrooms in a bowl and add balsamic vinegar. Let sit for about an hour.
  3. Preheat grill and then cook mushrooms over high heat for about 5 minutes on each side.
  4. Towards the end of cooking, add cheese so that it melts.
  5. Remove mushrooms from grill.


Time to build the sandwich!

  1. Slice rolls in half or divide and slice loaf.
  2. Drizzle olive oil on the inside of each roll.
  3. Put spinach on roll and then place 1-2 mushrooms on top.
  4. Put the sandwich together and ENJOY!

*Ciabatta bread is great heated in the oven before using, if you would like to do this, preheat the oven to 350 and then place the bread in oven for 8-10 minutes.
