Ingredients:
1 large clove of garlic, smashed
2 tbsp apple cider vinegar
1 tbsp sugar
Pinch of salt
1/2 cup water
4 baby cucumbers (Persian cucumbers), sliced into thin round slices.
Directions:
- Add the smashed garlic clove to a large bowl. Add the sliced cucumbers to the bowl.
- In a saucepan, combine the apple cider vinegar, sugar, a pinch of salt and the water; heat to boiling. Once the vinegar mixture is boiling, remove from heat and carefully pour over the cucumbers and garlic.
- Stir occasionally, leaving it to pickle for at least 15 minutes.
- Cool completely before refrigerating.
- Before serving, remove pickles from liquid to eat and enjoy!
