Homemade Pickles

Grilling season is upon us and one of my favorite condiments to put on everything is pickles!! It was a BBQ game changer for me when I learned how easy it was to make them homemade (and they are much healthier since you are omitting the food dyes etc... added to store bought pickles)! These pickles will last a week in the brine and in a sealed container. 

Ingredients:
1 large clove of garlic, smashed
2 tbsp apple cider vinegar
1 tbsp sugar
Pinch of salt
1/2 cup water 
4 baby cucumbers (Persian cucumbers), sliced into thin round slices. 

Directions:
  1. Add the smashed garlic clove to a large bowl. Add the sliced cucumbers to the bowl.
  2. In a saucepan, combine the apple cider vinegar, sugar, a pinch of salt and the water; heat to boiling. Once the vinegar mixture is boiling, remove from heat and carefully pour over the cucumbers and garlic.
  3. Stir occasionally, leaving it to pickle for at least 15 minutes.
  4. Cool completely before refrigerating.
  5. Before serving, remove pickles from liquid to eat and enjoy!
