Black Bean and Corn Salad

Summer food is all about fresh, light and flavorful! Here's a tasty summer salad that can serve as a side dish, light lunch or a salsa that pairs great with tortilla chips or on top of grilled chicken.

Ingredients:
1 bag of frozen corn kernels
1 red bell pepper, washed, seeded and chopped
1/2 red onion, peeled and chopped
2 cans of black beans, drained and rinsed
2 limes, juiced
1/4 cup olive oil
4 dashes of hot sauce (optional)
Salt and pepper, to taste

Directions:
  1. Mix all ingredients together in a bowl and toss.
  2. Let the mixture sit at room temperature for about 25 minutes before serving.
  3. This will give the corn enough time to defrost, but your salad will still be nice and cool!
