Ingredients:
1 bag of frozen corn kernels
1 red bell pepper, washed, seeded and chopped
1/2 red onion, peeled and chopped
2 cans of black beans, drained and rinsed
2 limes, juiced
1/4 cup olive oil
4 dashes of hot sauce (optional)
Salt and pepper, to taste
Directions:
- Mix all ingredients together in a bowl and toss.
- Let the mixture sit at room temperature for about 25 minutes before serving.
- This will give the corn enough time to defrost, but your salad will still be nice and cool!
