Italian Tuna Salad

Italian tuna is a lighter version of traditional tuna salad. Italian tuna usually comes packed in olive oil instead of water and is traditionally mixed with chopped vegetables. It is great in a sandwich or served on top of a bed of your favorite lettuce.

This is great for a picnic and a perfect way to get some extra veggies in a bagged lunch for school or work too! Just about any combo of vegetables can be used in this recipe and you can also add chickpeas or white beans!

Ingredients:
Tuna packed in olive oil, not drained
Celery, chopped
Cucumber, chopped
Carrots, shredded
Olives, sliced
Tomato, diced
Salt and pepper

Directions:
  1. In a small mixing bowl, combine all ingredients. Add salt and pepper to taste.
  2. Place in refrigerator for a minimum of one hour. 
  3. Serve over lettuce or in a sandwich.
