This is great for a picnic and a perfect way to get some extra veggies in a bagged lunch for school or work too! Just about any combo of vegetables can be used in this recipe and you can also add chickpeas or white beans!
Ingredients:
Tuna packed in olive oil, not drained
Celery, chopped
Cucumber, chopped
Carrots, shredded
Olives, sliced
Tomato, diced
Salt and pepper
Directions:
- In a small mixing bowl, combine all ingredients. Add salt and pepper to taste.
- Place in refrigerator for a minimum of one hour.
- Serve over lettuce or in a sandwich.
