Grilled Baby Potatoes

Potato salad is a common food for picnics and cookouts... why not take a summer staple and switch it up a bit!

These grilled baby potatoes are super simple to make and will impress your family and guests. Use your favorite kind of baby potatoes and you can even customize this recipe a bit by adding your favorites spices to the potatoes before grilling. You can also serve these with some butter and sour cream and they become mini "baked" potatoes!

Ingredients:
Baby potatoes, we used a mixture of Yukon Gold, red and purple
Olive oil
Salt and pepper 

Directions:
  1. Place potatoes in a pot and cover with cold water plus about 3 inches.  
  2. Bring to a boil and then reduce heat, and then simmer for an additional 5 minutes.
  3. Carefully drain potatoes and place into bowl. 
  4. Drizzle potatoes with olive oil and stir until coated well.
  5. On a preheated grill, grill potatoes over high heat, turning frequently, until golden brown and fork-tender.
  6. Remove from grill and serve hot.
