Corn and Black Bean Salad with Honey Lime Dressing

This simple and refreshing salad is a great side dish or can be made into a complete meal with the addition of some grilled chicken or shrimp on top! It also makes for a tasty filling in tacos or burritos.

Ingredients:
3 cups corn kernels, fresh (cooked) or frozen (thawed)
1 can (15 ounce) black beans, rinsed and drained
2 limes, juiced
2 tbsp honey
1/3 cup olive oil
Salt and pepper, to taste

Directions:
  1. In a bowl, combine corn and black beans and set aside.
  2. In a separate bowl, combine the honey and lime juice and stir until combined, then whisk in the olive oil.
  3. Pour dressing over corn and bean mixture and mix until the salad is evenly coated.
  4. Cover and refrigerate for at least an hour for the best flavor.
  5. When ready to serve, mix again and season with salt and pepper to your liking.
