This simple and refreshing salad is a great side dish or can be made into a complete meal with the addition of some grilled chicken or shrimp on top! It also makes for a tasty filling in tacos or burritos.
Ingredients:
3 cups corn kernels, fresh (cooked) or frozen (thawed)1 can (15 ounce) black beans, rinsed and drained
2 limes, juiced
2 tbsp honey
1/3 cup olive oil
Salt and pepper, to taste
Directions:
- In a bowl, combine corn and black beans and set aside.
- In a separate bowl, combine the honey and lime juice and stir until combined, then whisk in the olive oil.
- Pour dressing over corn and bean mixture and mix until the salad is evenly coated.
- Cover and refrigerate for at least an hour for the best flavor.
- When ready to serve, mix again and season with salt and pepper to your liking.
