Gingerbread Stars

When Macaroni Kid Eats asked me if I would like to contribute to the newsletter, I was honored!  I decided to share an old family gingerbread recipe with all of you!  These cookies are definitely a North Pole favorite!  Be sure to serve them up with a tall, cold glass of milk! 

Ingredients: 

1 cup or 2 sticks of soft butter 
3/4 cup of dark brown sugar 
1/2 cup molasses 
1 egg 
1 tsp of cinnamon 
1 tsp baking soda 
1/2 tsp of nutmeg 
2 tsp of ground ginger 
3 1/4 cup all-purpose flour 
1/4 tsp of ground clove 
1/4 tsp of salt  

Directions:

1. Preheat oven to 350 degrees F. 
2. Cream together butter and sugar until fluffy then add molasses and egg.  Be sure to scrape the sides of the bowl at least twice! 
3. In a separate bowl, sift together flour, cinnamon, ginger, nutmeg, baking soda, salt and clove.  Add sifted mixture into the butter mix one cup at at time until well blended.  Kneading by hand always works best!  
4. Chill in ice box for at least 2 hours. 
5. Roll out gingerbread on a lightly floured surface to 1/4 inch thickness and cut stars (or other shapes)!  
6. Place stars on cookie sheet lined with parchment paper.  Be sure to leave a 2 inch space between stars. 
7. Bake for 8-10 minutes.
8. Let cool and decorate with desired icing or candies! (makes about 40 stars)
