Chili 3 Ways

Turkey, Beef or Veggie

Makes approx. 1 gallon – 8 servings

The following ingredients can be combined in a slow cooker to make a quick and easy Turkey, Beef or Vegetable Chili - 4 lbs ground turkey or 4 lbs ground beef or 2 lbs chopped zucchini, 12 oz. sliced mushrooms and 1 lbs frozen corn. Try using a combination of a few to make your own creation!

Ingredients:
1 tbsp vegetable oil 
1 medium onion, diced
1 green pepper, seeded and diced
3 cloves garlic, minced
1 tbsp chili powder, plus more as needed
2 tsp cumin powder
Pinch cayenne pepper powder (optional)
2 tbsp brown sugar
2 cans (28oz) chopped tomatoes with green chilies (any tomatoes will work)
1 can (15oz) black beans, drained and rinsed
1 can (15oz) dark kidney beans, drained and rinsed

Salt and ground black pepper, to taste

Garnish:
Shredded cheddar cheese
Chopped cilantro
Sour cream

  1. Directions:
    Add the oil to a large pot over medium high heat. Add the main ingredient(s) (turkey, beef or veggies) and cook until browned. Stir often.
  2. If using turkey or beef, drain in a colander to remove the fat.
  3. Combine all ingredients into a slow cooker.
  4. Cook on high heat for 4 hours.
  5. Taste chili, add more chili powder if needed.
  6. Serve hot and garnish with any or all of the above.
