Bananas Foster French Toast

The perfect sweet treat to make for a special mom on Mother's Day!

Ingredients:
4 eggs
1/4 cup milk
2 teaspoon vanilla extract - divided
8 slices whole grain bread bread
2 bananas, sliced
1/2 cup brown sugar
1/4 cup butter
1 tablespoon dark rum or rum extract - optional
powdered sugar
Oil

Directions:
Crack eggs into medium size shallow bowl, beat lightly with a fork. Add milk and 1 tsp vanilla, stir well.

Heat griddle or frying pan over medium heat.  Coat with a thin layer of oil.

Dip bread slices, one at a time, into the egg mixture.  Dip only as many slices of bread that you will be cooking at one time.

Place bread slices in griddle or frying pan, heating slowly until golden brown. Flip over and brown the other side.  Repeat with remaining bread slices.  If making additional slices, place cooked french toast on a cookie sheet and keep warm in a oven set to 250 degrees.

While french toast is cooking, heat a medium sized pan to make banana topping.  Melt butter over medium heat. Stir in sugar, once melted add rum, vanilla and bananas - stir continuously.  When mixture begins to bubble cook for an additional 2 minutes or until bananas are softened.   

Place 4 french toast slices on a plate and top with half of the bananas foster mixture.

Serve hot, dusted with powered sugar.

*The topping would also be great served over vanilla ice cream as a dessert!
