Grilled Turkey Tenderloin Salad

Fresh vegetables and fruit along with grilled turkey, make this a perfect Summertime dinner!

Ingredients:
2 Turkey tenderloins
2 bags Spring mix (approx. 20 ounces)
1/2 pint red grape tomatoes
1/2 pint yellow grape tomatoes
1/2 cup carrots, shredded
1 cup strawberries, quartered
1 cup red grapes, quartered
1 apple, diced
Salad Dressing of your choice (we really liked a lime vinaigrette with this salad)
 
Directions:
1. Preheat grill
2. Rub turkey tenderloins with olive oil, salt and pepper.  Grill for 10 minutes on each side or until turkey reaches an internal temperature of 165F.
3. Remove turkey tenderloins from the grill and place on a plate to rest for 10 minutes before slicing.
4. Place a bed of spring mix on  4 plates.  Arrange the red and yellow tomatoes and carrots evenly between these 4 plates.
5. Slice turkey tenderloins into 1 inch thick slices and place on top of the salad.
6. Garnish with the strawberries, grapes and diced apple.
7. Serve with you favorite dressing.

Makes 4 dinner size salads
