A fun lunch in under 10 minutes!

Parents often ask me for suggestions on how to get creative with their kids’ lunches without taking a lot of time.  I understand. I might plan school lunches for a living but I have 3 kids with activities, homework, laundry, grocery shopping and an endless to-do list. 

One of my own kid’s favorite school lunches comes in the form of what we call “swords.”  The possibilities here are endless because you can combine fruits, veggies, meats and cheeses into fun-to-eat stacks.  The best part? You don’t need special gadgets or hard to find ingredients.  

Pictured above, clockwise: 

Asian Chicken Swords – grilled chicken, mandarin oranges and Asian dipping sauce.
Italian Swords – nitrate free salami, mini mozzarella balls, grape tomatoes.
American BBQ Swords – grilled chicken, tomatoes, cheese cubes and barbecue sauce for dipping.
Hawaiian Swords -  pineapple chunks and honey ham. 

Remember to always include fruits and veggies in your kid’s lunch.  It’s healthy to eat their rainbow!
