Mini Corn Dog Muffins

Hot dogs are not a favorite in our house, with the exception of corn dogs - which we don't typically make at home.  Corn dogs are a MUST when we visit county fairs in the warmer months.  We did a little experimenting before friends visited last week and we came up with these Mini Corn Dog Muffins.  These were easy to make, healthier than the fried version and loved by all!

Ingredients:
2 boxes corn muffin mix - 8.5 oz each (we used Jiffy)
milk, eggs and/or to make muffins as stated on box
24 mini hot dogs
non-stick cooking spray

Directions:
1. Preheat oven to 400 degrees
2. Cut mini hot dog into quarters and set aside
3. Prepare corn muffin mix according to package directions
4. Generously spray 2 mini muffin trays
5. With a teaspoon, fill each mini muffin tray about 3/4 full
6. Press 2 pieces of hot dog into each mini muffin
7. Bake for approximately 12 - 14 minutes or until slightly browned
8. Remove from oven and let sit one minute
9. Using a teaspoon remove mini muffins from tray
10. Serve hot with your favorite condiments
