Fire-Grilled Pizza Crusts Review and Recipes

While at the supermarket last week, we sampled a great new "pizza crust" product that my boys and I both loved! Not only is it convenient, but it is healthy and perfect for a quick weeknight dinner (or game day snack)! Since everyone gave Top This! a thumbs up and I was in search of a quick meal for karate night, we purchased a package and picked up some of our favorite toppings.
The the boys choose sauce, cheese and broccoli and the "adult" pizza got topped with sauce, cheese, mushrooms, zucchini, ricotta and black pepper. Each pizza took less than 10 minutes to cook and get perfectly crispy. Two Top This! pizzas with some vegetables on the side was a suitable portion size for a family of 5. Crusts are already grilled, so all these recipes call for baking on the middle shelf of a 450º oven for 8-10 minutes. Sauces should go on after the cheese either by dolloping them or applying them from a squeeze bottle in a zigzag pattern.
Authentic Pizza
1 Top This! pizza crust
1 cup loosely packed pizza cheese
⅓ cup Pomodoro sauce
¼ cup pesto sauce
After baking sprinkle 1 tablespoon chopped parsley and ¼ cup diced scallion (green part only)
Pineapple & BBQ Chicken Pizza
1 Top This! pizza shell
1 cup loosely packed pizza cheese
¼ cup of diced prosciutto
¼ cup diced grilled pineapple (or roasted)
¼ cup roasted red pepper
½ cup diced chicken in BBQ sauce
After baking: ¼ cup diced scallion (green part only)
Mediterranean Pizza
1 Top This! pizza shell
1 cup loosely packed pizza cheese
⅓ cup Pomodoro sauce
¼ cup of cooked spinach
¼ cup crumbled feta cheese
¼ cup of sliced sautéed mushrooms
¼ cup of sliced black olives
After baking sprinkle ¼ cup diced scallion (green part only)
Greek Salad Pizza
1 Top This! grilled pizza crust
1 cup loosely packed pizza
cheese
1/3 cup Pomodoro sauce
Bake in the oven at 450°
Toss mixed greens, tomato, feta, red onion, black olives and capers in garlic-oregano vinaigrette
Remove pizza from oven and top immediately with the tossed salad.
Cut into slices and serve with fresh cracked black pepper
