Cottage Cheese Pancakes

Here's a simple recipe for cottage cheese pancakes, our grand kids love them! These can be made with corn meal or to make them suitable for Passover, you can switch out the corn meal for matzah meal as stated below.

Ingredients:
1 cup cottage cheese
2 eggs
2 TBS matzah meal
1-1/2 TBS vegetable oil

Directions:
Mix everything together.
I cook on a hot griddle; no need to add oil. Let pancakes brown, then flip them over.
We serve with yogurt and fresh berries and sliced bananas.
