Roasted Asparagus with Lemon and Parmesan

Asparagus is one of the first vegetables available for harvest in the Spring and can easily be found in most produce departments. Asparagus is also VERY easy to overcook, which can give this tasty vegetable a bad reputation! Here is fool proof recipe that is sure to be a new family favorite!

Ingredients:
1 pound asparagus, blanched (see below)
2 Tbsp olive oil
½ cup grated Parmesan cheese
1 lemon - squeezed for the juice
salt & pepper to taste
 
Directions:
  1. Blanch asparagus by placing in boiling salted water for 1 minute.
  2. Set oven to 425F
  3. Drain asparagus
  4. Spread asparagus in single layer on baking sheet, season with salt and pepper
  5. Coat with the olive oil and lemon juice
  6. Sprinkle the cheese evenly over asparagus
  7. Roast in oven for 20 minutes or until cheese browns
  8. Serve hot
