Green Bean Salad with Sauteed Garlic

This green bean salad is a simple and healthy side dish, perfect for BBQ and grilling season.

Ingredients:
2 pounds green beans, washed and trimmed
3 tbsp. olive oil
3 cloves garlic, peeled and thinly sliced
1 cup red wine vinegar
salt and black pepper, to taste

Directions:
1. Bring a large pot of salted water to a boil. Blanch green beans in boiling water for 4 - 5 minutes or desired tenderness.
2. Drain green beans and cold shock beans by running under cold water. Be sure to drain all excess water once cooled. Set aside.
3. In a sauté pan, over medium heat, add the olive oil and sliced garlic. Sauté garlic until golden brown, about 2 to 3 minutes. Transfer garlic and oil into a large bowl.
4. Add red wine vinegar to garlic and olive oil, stir to combine. Add green beans and toss well.  Season with salt and pepper.
5. Refrigerate for an hour or more before serving.
6. Serve cold.
