Veggie Hash

Fresh veggies and a hot skillet are all you need for this quick and easy breakfast! This recipe is a great template - experiment and add some of your favorite veggies or whatever you have on hand.

Ingredients:
1/2 small onion, fine dice
1 bell pepper, fine dice
2 yellow potatoes, fine dice
1 jalapeno (optional), fine dice
2 tbsp olive oil
salt and pepper

Directions:
1. Heat olive oil in a skillet over medium.
2. Add all ingredients into the hot skillet. Stir occasionally. 
3. Cook until the potatoes are golden brown and tender. Add salt and pepper to taste.
4. Serve hot, topped with your favorite style of eggs.
