Portabella Sliders

Mushrooms are a go-to in our house, pretty sure I never leave the market without at least one package in my cart. Mushrooms can be a great substitute for meat if you are looking to make a dish lighter or just want something different. 

These portabella sliders are simple, healthy and just might become a new favorite for your family! They are perfect for little hands too!

Ingredients:
4 portabella mushrooms, medium size
Small red bell pepper
Fresh baby spinach
1 cup balsamic vinegar
4 slices extra sharp cheddar cheese
1 tbsp oil
Slider rolls

Directions:
  1. Rinse off mushrooms and if the stems are attached, trim them (I also scrape the gills/underside off with a spoon).
  2. Place mushrooms in a bowl and add balsamic vinegar. Let sit for about one hour.
  3. Remove stem and seeds from pepper and cut into slices. Be sure to slice so the peppers will not fall through the grill grates easily. Toss pepper slices with oil and set aside.
  4. Preheat grill and then cook mushrooms over high heat for about 5 minutes on each side.
  5. Grill red pepper slices until tender.
  6. Towards the end of cooking, add cheese to the mushrooms so that it melts.
  7. Remove mushrooms from grill.
  8. Build the sandwich on a slider roll - a few baby spinach leaves, mushroom and red pepper slices.
  9. Time to enjoy!
