Mini Apple Pies

Ingredients:

3 c. apples, peeled and diced

2 tbsp. lemon juice

1 sleeve of refrigerated pie crust, brought to room temperature

1/4 c. brown sugar

1/4 c. granulated sugar

1/2 tsp cinnamon

1 tbsp. all purpose flour

1 egg,  beaten

1 1/2 tbsp turbino sugar

cooking spray




Directions:

1.  Preheat oven to 350 degrees.

2.  Spray baking dish with cooking spray.  Combine diced apples, lemon juice, brown sugar, granulated sugar and cinnamon in medium size sauce pan over medium low heat for about 10 minutes until apples are softened.  Remove from heat and stir in 1 tbsp all purpose flour until mixture is thickened.
 
3.  Using a 3" inch biscuit cutter, cut out 17-18 circles of pie crust...place approximately 1 tsp apple filling in center or each circle.  Fold over and press to edges to.  Place mini pies on greased cooking sheet and use fork to seal edges (approximately 17-18 mini pies).  You will have to roll remaining dough out to cut out other circles.

4.  Place on grease baking sheet and brush with beaten egg wash.  Sprinkle with raw sugar.  Bake for approximately 10-12 minutes (or until brown).  Remove from oven and place on cooling rack.  Serve with vanilla ice cream.

5.  Serve warm with vanilla ice cream.

If you have any left over apple filling, save it to mix into morning oatmeal, top a late night bowl of ice cream or mix into pancake batter.
