Spicy Meatloaf

Father's Day Meal Idea!

This classic American dish is given a distinctly Asian flavor with the addition of delicious sauces.  Try this recipe and it will become one of your favorites for meatloaf!  A twist on an old favorite courtesy of Annie Chun's.

Ingredients:
2 lbs ground meat (80% beef/veal and 20% pork combination)
1 onion – chopped
2 cloves garlic - minced
1 tsp salt
1/2 tsp. ground black pepper
1 slice white bread – crust removed
3 tbsp Ketchup
3 tbsp Annie Chun’s Gochujang Sauce
1/2 red bell pepper – small diced
a pinch of ground nutmeg
Spicy BBQ sauce as a glaze - Mix 50% premade/store bought BBQ sauce and 50% Annie Chun’s Gochujang Sauce to make the glaze to baste the top of the meat loaf
 
Directions:
Preheat oven to 325 degrees. 
Saute the onion and garlic, cook them down completely. 
Mix all the ingredients, do not overmix otherwise it will toughen the meatloaf. 
Shape and place in a loaf pan.
Place on top of a sheet pan lined with foil to catch the drips. 
Cook until the internal temperature reads 160 degree F, baste the top in 15 minutes intervals with the spicy BBQ sauce.
Let it rest for 20 minutes prior to serving.
