Apple Cake

A good friend of mine baked this apple cake for me last year, I'd say it may have been a mistake to share it with me...now I ask her for some every time she makes it!  I hope you enjoy this recipe as much as I do!

Ingredients:
1 stick butter, soft
1 cup sugar
2 eggs
1 tsp baking powder
1 cup all purpose flour
1 tsp vanilla extract
3 cups diced Granny Smith apples, peeled

Directions
1.  Preheat oven to 350°F
2   In a mixer, using a flat paddle attachment, combine the butter, sugar and eggs - mix until well incorporated.
3.  Continue mixing on low speed and slowly add the baking powder and flour.
4.  Add vanilla extract and mix for 1 minute on low speed.
5.  Fold in diced apples and mix for 30 seconds.
6.  Pour in a lightly greased 8x8 baking pan.
7.  Bake for 25 – 30  minutes
8.  Do not over-bake, cake will be very moist in the center.

This "cake" is great for breakfast, a snack or dessert.  Enjoy!
