Oven Roasted Cod with Tomato Sauce

Oven roasted cod is one of my new favorite "comfort foods", but unlike most food in this category, this dish is also light and healthy.  Toss some extra veggies into the sauce and you will have a complete meal in no time!

You will need:

2 pounds of fresh cod
3 cups of your favorite tomato sauce
1/2 cup dry white wine
1/2 tsp crushed red pepper flakes (optional)
2 tbsp olive oil

Directions:

1. Preheat oven to 425 degrees
2. In a small pot, combine tomato sauce, wine and red pepper flakes.  Over medium heat, bring mixture to a simmer, stirring often.
3. Coat the bottom of a roasting pan with olive oil and place cod into pan.
4. Carefully pour hot tomato sauce over cod.  
5. Bake, uncovered, for 20 minutes or until fish easily flakes and is cooked through.
6. Serve hot with your favorite pasta, rice or potatoes.
