Apple Cider Sangria

One of my very favorite cocktails is sangria, but most times it is considered a summertime drink (not that it matters to me), apple cider is also a favorite of mine. So after thinking about it, I experimented a little and combined a few of my favorite things before a get-together with friends. The result is a delicious sangria fitting for fall/wintertime and perfect for holiday parties!

Want to make a family friendly version? Just leave out the wine and brandy and cut the simple syrup in half!

What you will need:
1 bottle of white wine, we used Pinot Grigio
1/2 cup apple brandy
2 1/2 cups apple cider
3 apples, cubed
cinnamon simple syrup*
ginger ale

For cinnamon simple syrup:
1/2 cup sugar
1 tsp ground cinnamon
1 tsp vanilla
1 cup water

Combine simple syrup ingredients in a pot and simmer over medium heat until sugar is completely dissolved. Set aside to cool.

Directions:
Combine wine, brandy, cider, apples and cooled simple syrup in large pitcher or bowl, mix well. Refrigerate for 2 - 3 hours. Just before serving, add ginger ale to suit your taste (1 or 2 cups). Serve over ice and enjoy!
