Boiled Potatoes with Shallot Brown Butter

This side dish is a great change from typical mashed or roasted potatoes and will pair well with most meals!

Ingredients:
1 tbsp olive oil
1 stick butter
2 shallots, chopped fine
1 clove garlic, minced
5 lbs potatoes, cut into wedges
¼ cup chopped fresh parsley
Salt & pepper to taste

Directions:
1. Add potatoes to large stock pot and fill with cold water. Put on stove and set to high heat.
2. Meanwhile, add olive oil and butter to large pan over medium heat.
3. Once butter is melted, add shallots and garlic. Cook over medium heat, stir often.
4. Once potatoes boil, reduce heat to a low simmer for 10 minutes or until fork tender.
5. Continue stirring shallot butter often, by the time the potatoes are done the butter will be browned.
6. Drain potatoes and transfer to a large mixing bowl.
7. Add the shallot butter and mix well.
8. Garnish with fresh chopped parsley.
9. Serve hot as a side dish.
