Stuffed Mushrooms

Stuffed mushrooms are easy to make and the variations are endless. This is also a great recipe for the kiddos to help with; mine love filling the mushroom caps!

Ingredients:

1 cup Italian-style dried bread crumbs
1/2 cup grated Parmesan cheese
2 garlic cloves, peeled and minced
Salt and black pepper
2 Tbsp extra-virgin olive oil
24 large white mushrooms, cleaned and stems separated from the caps
Parchment paper

Directions:
  1. Preheat the oven to 350 degrees F.
  2. In a pot of boiling water, blanch mushrooms for 1 minute. Drain and set aside.
  3. In a medium bowl, combine bread crumbs, grated cheese, garlic, salt and pepper. Add olive oil and stir well.
  4. Line a large baking sheet with parchment paper. Spoon the filling into the mushroom caps and arrange on the baking sheet. 
  5. Bake until the mushrooms are tender, the filling is heated through and golden brown on top, about 25 minutes. 
  6. Serve warm.
