Baked Ghosts

AKA Duchess Potatoes

Turn a typical side dish into spooky fun! Want to make green goblins instead? Just add a touch of green food coloring or some spinach puree to the recipe.

Ingredients:
4 cups prepared mashed potatoes (instant, leftover, or homemade)
2 eggs
1/4 cup melted butter
3 tbsp grated Parmesan cheese
1 can black olives, drained

Pastry bag 
Large round piping tip


Directions:
1. Preheat oven to 400 degrees.
2. Add eggs and Parmesan cheese to mashed potatoes.
3. Mix well until fully incorporated. Be sure not to over mix or the potatoes will become gummy and difficult to work with.
4. Fill a pastry bag fitted with a large round tip with the potato mixture (if you do not have a pastry bag, fill a sandwich bag with the potatoes and cut off one of the corners).
5. Pipe the potato mixture into a “ghost like” shape onto a greased sheet pan.



6. Drizzle the “ghosts” with the melted butter.
7. Bake for 15-20 minutes or until golden brown.
8. Garnish with a small piece of olive for “eyes” (raisins, peas, or corn kernels also make good eyes).
