Caramelized Onion Tarts

Caramelized onions are simple to make and can be a great addition to many foods. These onion tarts are delicious and a perfect New Year's Eve appetizer!

Ingredients:
2 large onions, cut into thin strips (julienne)
2 tbsp butter
30 Mini Fillo Shells
1/2 pound shredded Jarlsberg, Swiss or Gruyere Cheese

Instructions for caramelized onions:
1. Heat butter in a large sauté pan over medium-low heat until fully melted.
2. Add the onions and cook over medium-low heat stirring constantly until onions have softened.
3. Continue cooking for 30 minutes stirring often until onions are caramelized. Onions should be very soft and dark golden in color.
4. Remove the caramelized onions from the heat and reserve for later use.


**Onions can be made ahead of time and will last in the refrigerator for 5 - 7 days**
 
To assemble the tarts:
1. Preheat the oven to 375F.
2. Lay out the fillo shells on a sheet pan.
3. Fill the shells with the caramelized onions.
4. Top the onions with the cheese.
5. Bake for 8 - 10 minutes or until cheese is fully melted.
6. Serve hot.
