Sweet Potato Fries with a KICK!

Want to know the secret to  crispy sweet potato fries? After you wash and cut those sweet little spuds, dry them COMPLETELY. You want them bone dry, so be sure to dry them off, really really well. Otherwise you WILL have soggy fries. Say NO to soggy fries!

This recipe adds a little kick to the fries. Feel free to adjust the level of kick to your family's liking.

Ingredients:
2 sweet potatoes
olive oil
sea salt
cinnamon
cayenne Pepper (optional ~ you can use regular pepper instead)
maple Syrup

Directions:
  1. Set your oven to 450 degrees.
  2. Cut your spuds. You can choose to peel the potatoes or not. I leave the skins on for added nutrition. Cut off any skinny ends and throw in the freezer for a future veggie stock. Cut one potato in half and then into four slices. Cut those into fries. Repeat.
  3. Throw all of your ingredients except the maple syrup on a non-stick baking pan and mix together well. You can decide on how much spice to use. Cinnamon can be spicy, so just a little of that and a dash of cayenne should do ~ especially for the little ones. Our family likes a little heat, so we add more then the norm. As for the oil, you just want them coated and glossy.
  4. Evenly spread your fries on the pan and (this is important) DO NOT LET THEM TOUCH! They need room to crisp.
  5. Put them in the oven for 15 minutes. Another way to be sure your fries are crispy:  Do not open your oven. It will  be tempting to do so because they smell so yummy, but don't do it! Turn them over after 15 minutes and cook on the other side for an additional 10 minutes.
  6. Serve them on a plate decorated with cinnamon, drizzle with maple syrup and enjoy!
