Birthday Cake Popcorn

Salty, sweet, crunchy and colorful... do I have your full attention yet? This might be one of the most perfect party treats yet. I am going to go out on a limb and say most people love popcorn and cake, and we just happen to combine both for this special tasty creation - Birthday Cake Popcorn!

Once made, Birthday Cake Popcorn is super easy to serve and almost mess free. There is one little thing about this recipe that I would like to add, even though very easy to make - it can get a bit messy, way messier than I first thought. I promise, the mess is more than worth it!

A few tips:
  • Be sure to use a large bowl to mix the popcorn in. Think you found one that is big enough, good... now grab a bigger one!
  • You might need to use your hands. I started mixing the popcorn and melted candy mixture with a wooden spoon... that works, but not as efficiently as clean hands. And your hands will end up very messy.
  • Have everything ready to go, especially the parchment lined baking sheet (this helps when your hands are covered in melted candy and popcorn) and pre-measure the sprinkles, if you choose to measure those at all - it's not like you can ever use too many!

Ingredients:
6-8 cups popped popcorn (2 bags of microwave popcorn)
2 cups (approx. 16 oz) vanilla candy coating or candy melts
3/4 cup white cake mix, dry (we used funfetti)
1/2 cup colored sprinkles
parchment paper

Directions:
  1. Place popped popcorn in a large bowl.
  2. Melt candy coating according to directions on package.
  3. Stir cake mix into melted candy coating until combined.
  4. Pour candy mixture over popcorn and gently mix until evenly coated.
  5. Spread popcorn on a parchment lined baking sheet and top with sprinkles.
  6. Set aside and let candy coating harden.
  7. Either serve right away or store in an airtight container.
