Jack-O-Lantern and Mummy Quesadillas

A simple, fun, spooky meal that your kiddos will love! 

Ingredients:
Flour tortillas, we used regular white for the mummys and tomato (orange colored) for the jack-o-lanterns  
Shredded cheese, cheddar, cheddar jack or Mexican blend
Sliced olives, for mummy eyes
Cooking spray
Salsa, optional
Sour cream, optional

Cutting the jack-o-lanterns and mummys:
Jack-O-Lanterns - For the top part of the quesadilla, place tortilla on a cutting board and, with a sharp paring knife, cut out the pumpkin stem, eyes, nose and mouth - repeat for as many jack-o-lantern quesadillas as you would like to make. For the bottom part of the quesadilla, place tortilla on a cutting board and, with a sharp paring knife, cut out the pumpkin stem. You should have an equal number of jack-o-lantern faces and just the cut out stems.
Mummys - For the top part of the quesadilla, place tortillas on a cutting board and, with a sharp paring knife, cut tortilla into strips, repeat for as many mummy quesadillas as you would like to make. For the bottom part of the quesadilla, use the tortilla as is.


Directions:
  1. Preheat oven to 425.
  2. Coat baking sheet with cooking spray.
  3. Place bottom tortilla for jack-o-lantern or mummy on baking sheet.
  4. Cover with shredded cheese.
  5. Place top part of jack-o-lantern over shredded cheese.
  6. For the mummys, arrange tortilla strips over shredded cheese and use an olive slice for each eye.  
  7. Place in oven and bake for 10-15 minutes or until tortillas start to brown and the cheese is melted.
  8. Slice and serve hot with salsa and sour cream.
