Ingredients:
1 lb Brussels sprouts (fresh or frozen)
2 tbsp olive oil
1 tbsp butter, melted
Salt & pepper to taste
Directions:
- Preheat oven to 450F.
- If using fresh - clean, trim and blanch Brussels sprouts in boiling salted water for 1 minute. If using frozen, microwave for 2 minutes to thaw.
- Cut each sprout in half lengthwise and toss with olive oil and butter.
- Pour onto a baking sheet or into a large cast iron skillet.
- Place in the oven and roast for about 20 minutes and then stir the sprouts. Roast for an additional 15-20 minutes, checking/stirring about every 5 minutes.
- Sprouts should be crisp and browned on the outside and tender inside.
- Remove from oven and season with salt and pepper.
- Serve hot.
