This simple and refreshing side goes perfectly with any grilled dish and is great for a picnic or potluck meal!
8 cups ripe seedless watermelon, cut into bite-size pieces - we used 1/2 of a whole watermelon
1 English cucumber, cut into bite-size pieces
7-8 fresh mint leaves, thinly sliced
1 lime, juiced
- In a large bowl, combine watermelon, cucumbers and mint.
- Add lime juice and mix well.
- Let sit in the refrigerator for at least one hour before serving and enjoy cold.
