Chicken, Potato and Carrot Foil Packets

Here is a great recipe to use while camping, or if you are just looking for something a little different you can even pretend you are camping in your backyard! These packets can be customized with all of your favorite ingredients and seasonings.

Ingredients:

Boneless, skinless, chicken breasts, pieces
Red potatoes, washed and cut into chunks
Baby carrots
Butter or butter substitute, 1-2 tsp per packet
Seasoning, we used lemon pepper and Italianย 
Heavy duty foil
Tongs to remove packets from campfire

Directions:
1. Make sure you have hot coals ready to cook on or preheat oven to 400 degrees.
2. For each packet, place two layers of foil on table, about 18 inches in length.
3. Put a handful of potatoes on foil, then baby carrots and top with a few pieces of chicken - amounts should be enough for one serving.
4. Top with seasoning of your choice and 1-2 tsp. of butter.

5. Wrap foil packet tightly so no steam or juices escape.
6. Repeat for each packet/serving.
7. Place packets over hot coals and rotate every 10-15 minutes. Or place in preheated oven. If using oven a sheet pan under packets is recommended.


8. Cook packets until potatoes and carrots are tender and chicken is cooked through - cooking time will vary depending on how hot your coals are. You might have to unwrap one to check doneness.
9. Once cooking is complete, unwrap carefully and serve hot - enjoy your campfire creation!
