January brings some very cold nights, which are perfect for more hearty comfort foods like this Beef Stroganoff. You will find this dish is fairly simple to make and will be a hit with your whole family!
Ingredients:
2 shallots, chopped
1 lb crimini mushrooms, sliced
1 1/2 pounds beef sirloin, cut into thin strips
1 tsp Worcestershire sauce
1/4 cups bourbon (optional)
1/4 cup flour
3 cups beef stock
1 cup sour cream
Olive oil
Salt & pepper
Egg noodles, rice or mashed potatoes, prepared
Directions:
1. Heat olive oil in a large pan, cook shallots and mushrooms over medium until browned - about 8-10 minutes. Remove from pan and set aside.
2. Add beef sirloin to the same pan and saute over medium-high heat for about 5 minutes.
3. Add bourbon, Worcestershire sauce and 1 cup of the beef stock. Cook until boiling, then simmer for about 10 minutes.
4. Place mushroom mixture back into pan with beef and stir until combined, keep mixture simmering.
5. Stir 1 cup broth into flour, then add into pan, mixing well. The sauce will begin to thicken while simmering. Cook for a few more minutes and then add more stock if needed to get the sauce consistency that you prefer.
6. Just before serving - stir in sour cream and bring sauce back to a light simmer. Remove from heat.
7. Serve immediately over your choice of noodles, rice or mashed potatoes.
