This creamy, cheesy dish is sure to be a new staple with dinner. Mashed cauliflower is a healthier option for traditional mashed potatoes and tastes just as good!
2 large heads cauliflower, cut into florets
1 tbsp garlic, minced
1/2 - 3/4 cup 1% buttermilk
1 tbsp butter
Salt and black pepper, to taste
4 slices bacon, cooked and crumbled
2 tbsp minced fresh chives, divided
1/2 cup shredded reduced fat cheddar or Mexican blend cheese
2. Preheat the oven to 400 degrees.
3. Add the garlic, buttermilk and butter to the cauliflower and mash by hand or purée with a hand blender - add additional buttermilk if needed.
5. Mix in half of the chives and pour into a baking dish and top with shredded cheese and bacon.
6. Bake until the cheese melts and the cauliflower starts to brown, about 15 minutes.
