Bananas Foster French Toast

The perfect sweet breakfast treat to make for a special mom on Mother's Day!

Ingredients:

3 eggs

1/4 cup milk

2 tsp vanilla extract - divided

6 slices whole grain bread 

2 bananas, sliced

1/4 cup butter

1/2 cup brown sugar

1/4 tsp cinnamon 

1 tbsp dark rum or rum extract - optional

Cooking Spray

Whipped cream, optional 

Directions:

  1. Crack eggs into a shallow bowl, beat lightly with a fork. Add milk and 1 tsp vanilla, stir until combined.
  2. Heat griddle or frying pan over medium heat. Coat with cooking spray.
  3. Dip each slice of bread into egg mixture and then place dipped bread on griddle or frying pan. Flip over once the first side is golden brown and cook the second side the same way. If you are doing this in batches, place cooked french toast on a sheet pan and keep warm in an oven set to 250 degrees.
  4. While french toast is cooking, heat a medium sized pan to make banana topping. Melt butter over medium heat. Stir in brown sugar, once melted add rum, vanilla and bananas - stir continuously.  When mixture begins to bubble cook for an additional 2 minutes or until bananas are slightly softened.                                                                                                                                        
  5. Place 3 french toast slices on a plate and top with half of the bananas foster mixture.
  6. Serve hot and enjoy!

*The topping would also be great served over vanilla ice cream as a dessert!
