We went to a family reunion last weekend and that is where I discovered these super simple and tasty grilled quesadillas! At the reunion they were served as an appetizer along with lots of other snack-type foods... a few nights later, I took the idea and made a tasty dinner that was loved by everyone. We used refried beans, salsa and cheese, but it is so simple to add any of your favorite ingredients to this mixture.
Other than how tasty these are, my three favorite things about these quesadillas are you can prep them in advance... hours or even a day before you plan on cooking them, it is so easy to make these in large quantities for a big family or party, and they are GRILLED, which means you can keep your house cool on a hot day (plus very little clean up)!
Ingredients:
8 flour tortillas, we used large/burrito size
2 cans refried beans
1 jar salsa
2-3 cups shredded cheese, we used a Mexican blend
Sour cream, optional
Directions for prepping quesadillas:
- Spread about 2 tablespoons of refried beans on one half of a tortilla.
- Add a tablespoon of salsa on the refried beans.
- Sprinkle about 1/3 of a cup of cheese evenly over the beans and salsa.
- Fold tortilla in half and set aside.
- Repeat steps for all 8 quesadillas.
- Once all quesadillas are prepped, it is time to grill!
Grilling quesadillas:
- Preheat grill to medium-high heat.
- Carefully place quesadillas on the grill and watch closely; lower grill heat if quesadillas are browning too quickly.
- Flip after 3-4 minutes or once the first side of the tortilla is browned.
- Grill the second side for an additional 3-4 minutes, watching closely.
- Quesadillas are ready when both sides are brown and crispy and the middle is hot and melty.
- Remove from grill and cut into quarters.
- Serve immediately with salsa and/or sour cream.
