Chocolate Clams Provencal

Mexico. A world of its own. A town you must visit in Mexico? Loreto. Loreto, an almost secret, magical town that has many unique experiences waiting for you. But if there’s one thing you have to try when visiting Loreto, Mexico, its the Chocolate Clams. Fresh right out of the Sea of Cortez, this “Seafood Candy” is decadent. The flavor is a mix of contemporary, tangy, fresh and light. Mysterious and beautiful. There’s nothing quite like eating this delicacy fished right from the Sea. Sea to Table is the norm at the resort, Villa del Palmar on the Islands of Loreto in Baja California, Sur.

We had the unique experience of cooking in the kitchen of Danzante, one of the onsite restaurants at The Villa del Palmar Resort, located in Loreto, Mexico. The resort is magnificent and perfect for family vacation. The Chocolate Clams are served daily at Casa Mia, a casual restaurant that is both poolside and ocean-side. 

Alongside one of my colleagues and our kids, we prepared the Chocolate Clams Provencal with Chef Jiraldo Rodriguez. Chef Jiraldo Rodriguez is self taught and has over 20 years of experience working in the food and hospitality business in and around Baja California Sur. When talking with him, his pride of his Mexican heritage was evident. He loves his culture, the food it produces and he was excited to share his knowledge with us. Chef Jiraldo Rodriguez was honored to teach us this recipe and just like Loreto, the recipe is simple and flavorful.

To make this amazing dish you will need the following ingredients:

10 Chocolate clams*
1/2 cup of panko (or breadcrumbs)
1/2 cup parsley, chopped fine
2 cloves of garlic, chopped
1/2 cup of Parmesan cheese
1 ounce of white wine
1 ounce of tequila
1/2 stick of butter
Pinch of Salt
Pinch of Pepper

*Can’t get Chocolate Clams from Loretto? You can substitute local clams from your region.


Directions:

  1. Clean and carve out the clams.
  2. Put them in an aluminum tray.
  3. Melt the butter.
  4. In a bowl mix all the ingredients to form a dough like mixture.  
  5. When the dough is ready spoon a similar amount in each clam.
  6. Place Clams into an oven or salamander for 10 minutes.

Serve Chocolate Clams in a bowl or arranged on a serving dish. Your family will love them! Espero que lo disfruten!
