5-Ingredient Dish: A Quick and Easy Chicken Alfredo

Each month we share a meal made with 5 ingredients or less to help you spend less time in the kitchen and more time with your family! 

At the end of every week, my girlfriend and neighbor calls me and says “What are you making for dinner?” 

I always laugh because I know by Thursday or Friday she is going to call, and after a bit of small talk, she always asks the question.  

So I always reply, "What do you have?"  

She always has more than enough food on hand to put together a meal. BUT you know how it is, you get to the end of the week, you’ve already prepared three dinners, three lunches, three breakfasts, and snacks in between. You whipped up a snack when your friends stopped by for a glass of wine. By the end of the week, it’s hard to muster any more creativity to feed the family!

But five-ingredient Alfredo is a dish that is easy to make, a crowd-pleaser, and most importantly, you're likely to have all the ingredients in your pantry or cupboard already.

Ingredients:

  • Fusilli pasta (or whatever pasta you have!)
  • Jar of your favorite Alfredo sauce
  • Jar of fire-roasted red peppers, sliced
  • Jar of artichokes hearts
  • Chicken nuggets
  • Salt and pepper to taste

Directions:

Cook pasta as directed. My favorite is Barilla Protein (packed with protein, but the same great taste!)

Cook chicken nuggets as directed. Slice into bite-size pieces.

In a medium saucepan, combine cooked pasta, alfredo sauce, red peppers, and artichoke hearts. Add the chicken nuggets and stir.  

Salt and pepper to taste.

Flavor just the way you like it:

  • Like it spicy? Add some red pepper flakes.
  • Like it cheesy? Add some Romano or Parmigiana cheese.
  • Like it healthy? Add in fresh spring greens and herbs.
