Enjoy This Lobster Roll, Even If You Don't Live On Cape Cod

I grew up in New England, a place where summer means it is time for lobster rolls!  

I looked forward to this summertime favorite whether we were vacationing down in Cape Cod or getting a lobster roll from Kelly's on Revere Beach. Now that I live out west, it's harder to find a great lobster roll -- but I can make my own! My family's favorite is simple and I think truly the buttered bun is the key. When you bite into that buttery and crunchy roll, the flavor encompasses the succulent lobster ... and YUM!

Here's my favorite recipe:

Lobster Roll

Ingredients:

  • 2 pounds cooked lobster meat cut into bite-sized chunks
  • 1 cup mayonnaise
  • 3 teaspoons fresh lemon juice
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 split-top hot dog rolls
  • 4  tablespoons butter

Instructions:

  1. In a large bowl, add cooked lobster meat.
  2. In a medium bowl, add mayo, lemon juice, salt and pepper. Once it's mixed together, add to the large bowl of lobster meat.
  3. Slather on butter on both sides of the roll. In a medium frying pan, over medium heat, toast each side of the roll.  Each side should take 10-15 seconds to toast.
  4. Divide each roll with approximately 1 pound to each roll.  

Serves 2
