Jumpstart Your Days With Green Juice and Butter Coffee

2 recipes that changed my morning routine, and my life

By Erika Veduccio February 18, 2020

Successful and productive people have morning routines. Every inspirational talk, podcast, and book I've read always recommends having a morning routine. Well, the universe must have been listening to my need for a better morning routine because my new friends who visited me this past month, Jillie and Robbie, introduced me to two new incredible recipes that I can add to my morning routine.

Let me tell you a little about these two beautiful people and a bit about their story. Two lovely souls, one van and a mission to live a simple and abundant life. Jillie quit her corporate job to live a conscious life. For her, that meant buying a van, outfitting it to live in, and setting a vision to get in front of 1 million people and help them live their best life. Robbie is a man who can fix anything, loves to work out and has the calmest heart and sweet love for Jillie. It took great courage for them to embark on this new adventure. They set out to travel throughout the USA and to experience life. They are living and working in a small space & are traveling thousands of miles, seeing beautiful landscapes & meeting new people.

We were so lucky that they stopped in Southern California for a few weeks. We spent time together walking the beach, having family dinners, and the best part ---laughing. Jillie and Robbie exude love and having them as "van guests" was a treat for our family! We are forever grateful for our time spent together and the two recipes they shared with us.

Green Juice

Ingredients:

  • 2 handfuls of kale/chard
  • 1 golden beet, peeled and chopped in quarters
  • Handful of blueberries or blackberries
  • Handful of strawberries
  • 1 apple
  • 1/2 - 3/4 cup water

Directions:

  1. Take stems off kale/chard, add to blender
  2. Add berries, apple, and beet to blender
  3. Add water
  4. Blend

Want it colder? Add ice cubes!

This mixture makes about two 8 ounce cups. The energy I have felt with incorporating this into my morning routine has been mind blowing. Adding this simple recipe to my routine has changed my morning energy, which has snowballed into having a more productive day as a result. I love feeling nourished and I want you to feel this way too!

Butter Coffee

Ingredients:

  • 8 oz fresh brewed coffee (using a French press is best)
  • 1-2 Tablespoon grass-fed butter (we used Kerrygold, pure Irish butter)
  • 1-2 teaspoons of MCT oil (try different flavors, I loved the vanilla hazelnut flavor)

Directions:

  1. Make coffee with a French press. (You can also brew your coffee if you do not have a French press - the French press just gives a richer flavor.)
  2. In a blender, add coffee, butter, and MCT oil. Blend on medium for 30 seconds.

This bulletproof coffee is bold, strong, and packed with energy. This recipe particularly has helped me kick the habit of adding cream and sugar, which was really bothering my stomach. It's also Keto friendly.

I am so grateful for my friendship and the time I had with Jillie and Robbie. Their love and compassion to share these awesome recipes have changed the way I look at my morning routine. As a result, I am living more intentionally in what I put in my body. I have more energy and feel ultimately more alive.
