Loaded Baked Potato Frittata

What I love about making a frittata is that you can use whatever you have on hand. As long as you have eggs, the ingredients you add are up to you!  We used what we had to put together what we call a Loaded Baked Potato Frittata. It's delicious!

Ingredients:

  • 12 eggs
  • 2 tsp butter
  • 1 cup cheddar cheese
  • 1 cup sliced potatoes
  • 8 slices pre-cooked bacon
  • 2 cups cooked red and green peppers, and onion
  • 1 cup scallions

Directions:

  1. Preheat oven to 375 degrees.
  2. On the stove, turn on burner to medium-high. Add 1 Tbsp. butter to your frying pan or skillet. Heat until melted.
  3. In a large bowl, whisk 12 eggs together. If you have milk, add 1/4 cup while whisking.
  4. Add eggs to the frying pan.
  5. Evenly distribute potatoes, onion saute, and bacon over eggs.
  6. Once the edges have cooked, put the pan in the oven for 20 minutes. 
  7. Take out, slice, and serve!
